The Book of Unfinished Tales has a lot of background stories that really adds to the main published books, especially if you read the Third Age chapters while reading the Lord of the Rings trilogy.
The first two chapters about the First Age have since been developed into their own books (The Fall of Gondolin and The Children of Hurin)
Anyway, I'm throwing this poll up for people to pick their favorite chapters from this book. You can pick up to three, but if there are more, feel free to give them honorable mention in a post explaining your choices!

I picked The Battles of the Fords of Isen because pertains directly to the story told in The Lord of the Rings, as does The Disaster of the Gladden Fields that explains how Gollum came by the Ring. Cirion and Eorl and the Friendship of Gondor and Rohan is next as it fills in the history of why Gondor & Rohan are so close. The Palantari is a good one as it explains some about the origin and power of the seeing stones. Then I would say The Istari and The Hunt For The Ring to fill out the Third Age tales.
My honorable mention is Aldarion and Erendis as its about the only glimpse into life in Numenor that Tolkien gave to us. The Line of Elros: Kings of Numenor would a second honorable mention.

Sadly, I haven't been able to read this book yet. But I'm gonna guess my favorite chapter would have been the history of Galadriel and Celeborn cause I love everything about the elves 🥰

This Galadriel and Celeborn history is a bit different than what is given in the Silmarillion and Lord of the Rings. there are a lot of footnotes for that chapter.

So it's like a re-write or just more information? There is definitely more information. I think the story of Galadriel as presented in Lord of the Rings was a re-write of earlier renditions. Christopher Tolkien says this at the beginning of the chapter ...

Coincidentally, I've actually been re-reading Unfinished Tales in the last few days! I've really been enjoying reading a little bit about the language and culture of the Silvan Elves. As fascinating as the story of the Children of Hurin is, it always makes me feel depressed - so I like reading about other stories/aspects of Middle-Earth that aren't as nasty.

Middle-Earth is always full of unexplained mystery and magic - but Unfinished Tales kind of explores things that we don't have a lot of detail on, like the geography of Numenor, a story about one of the Numenorean kings and his tumultuous relationship with his wife, and as Hanasian mentioned, how the friendship between Gondor and Rohan started. 10/10 would recommend!

I had to vote for Narn i Hîn Húrin because every time I read any iteration of that tale, the pathos of it leaps off the page.
I also had to vote for Aldarion and Erendis...it's one of the few occassions where we have insight into an unhappy marriage and a female character at the same time.
My third vote was for the Battles of the Fords of Isen...These notable events set the stage for Rohan's part in the War of the Rings so very well.
If I could have voted for a fourth, I would have selected the Disaster of the Gladden Fields. I have been struck by this particular event since I first encountered the Gladden Fields in LoTR. It is a particularly haunting, grim, part of Middle-Earth history that has grimly fascinated me since reading it as a child.
